healthy(ish) easy vegan baking recipes I tried during quarantine

I use to hate cooking. I am the type of person where when I'm hungry, I just need food in my mouth right away. I was never very intentional about what I was eating in terms of presentation or variety, especially when eating at home.


Now that we're on the 185432th day of the Covid-19 pandemic, I have allocated some time to learn to cook and bake.


I realized I never gave much thought to the process of cooking. If I can make something in 15 minutes, why would I take 30 to make something else? But now, with time oh-so bountiful, I have added-might I say so myself- quite the array of yummy treats into my repertoire of recipes.


A big roadblock I told myself was that if I bake cookies or brownies or cakes, I will to eat it all and it will not do good things to my body. That is still something I keep in mind, which is why the recipes below are healthier versions of treats I love.


After making a new recipe every week for the past few months, here are my top 5 vegan baking recipes that are delicious and easy to make!

If you are in the mood for some delicious but healthy(ish) treats, here are 5 vegan recipes that are tried and true by yours truly.

#1 goji berry almond cookies

[ I replaced chocolate chips with Goji berries because I didn't have any chocolate at home]

#4 no knead, 3 ingredient dutch oven bread. Freshly baked white or whole wheat bread, knead I say more?

~common vegan alternatives~

butter --> oil

egg --> 1 tbl ground flaxseeds + 3 tbl water

milk --> milk alternatives [my personal favourite for baking is almond milk]
